I also recommend Death&Co, they do a great job explaining fundamental skills in craft cocktailing. I 2nd the Meehan's bartending manual as a good read. I recommend getting your cicerone beer server license. You won't get hired as a CH bartender right afterwards or another craft cocktail bar with a decent program, but theres a lot of sleepier restaurants with cocktail programs that will take a strong brewery candidate. Many restaurants understand that there's a strong brewery scene here and a lot of staff have to get started elsewhere. You obviously won't get mixing skills, but if you prove yourself good at the general multitasking, guest service, and teamwork you will be considered for other full bars willing to train. If you want a real bartending gig, starting off as a Barback or server at a brewery is a good shot in San Diego. 20% or $1/drink in North America is quite common (often because of our lower priced drinks and staff that is paid a lower amount) and a good guideline to follow overall.Ħ) I just started as a barback but know nothing where do I start?
